Hi.
Because of the amount of space the System Restore Files take, is it
possible to copy them to a CD and later
copy them back and have the same restore point functionality???

No. You could use the Disk Cleanup tool to remove all but the newest
Restore Point if your system currently runs well. In the Control Panel
 > System > System Restore > Settings you can limit the disk space that
is reserved for this feature.
